Zucchini Crab Cake Cooking Directions


Take your grated zucchini and place it in a cheesecloth or thin, clean teatowel. Take that zucchini and wring as much liquid out of it as you can. Themore liquid you can get out, the better your crab cake will hold together. Nowsaute the zucchini in a small pan with about a tablespoon of cooking oil untilit gets a little bit softer, just a couple of minutes. Once your zucchini issoft, add in the minced garlic and cook just until you can smell the garlic.Take your pan off the heat and cool the zucchini to room temperature.In a small mixing bowl, combine the rest of your ingredients together withyour cooled zucchini and garlic and make them into round patties about 2inches in diameter. You should get about 6 crab cakes out of this recipe. Putthe crab cakes into the fridge and chill for at least 30 minutes.Once they are chilled, heat a medium sized pan over medium high heat with 1/3cup of cooking oil (not olive though, as it has a very low smoking point).Once your pan is heated, cook half the cakes for about 3-5 minutes on thefirst side until crisp and a golden color, and then flip and cook for the sameamount of time on the other side. To test if your oil is hot enough, break offa small piece of one cake and place it in the pan, if the cake sizzles rightaway, your pan is ready. The inspiration


I started making variations of this recipe when I was in chiropractic andnaturopathic medical school. At the time, I was taking between 28 and 30credit hours each trimester and had two kids in middle school who were activein sports and activities. I wanted to make my family home cooked meals neededto make dinner fast!I find that mixing a bit of oil with a variety of herbs and spices, thenrubbing it on meat before grilling created a flavorful, but still quick andeasy dinner.After experimenting with a variety of combinations, I found that one of myfavorite flavor profiles for pork was the combination of garlic, mustard, andthyme. Now, I find that a tad bit of red pepper flakes makes the recipe reallysing.

How do you know when pork tenderloin is done


To check the temperature of the pork tenderloin, I first remove it from thegrill. Then I insert a meat thermometer into the center of the thickest partof the meat.While the USDA used to recommend cooking all pork to a temperature of 160ºFahrenheit, they now have relaxed this guideline and recommend cooking a newguideline of 145º Fahrenheit for most cuts. The have maintained the 160ºrecommendation for any ground pork.For medium rare pork, you want a temperature of 145º Fahrenheit to 150ºFahrenheit. For medium, you will want the temperature 150-155º Fahrenheit,medium well is 155-160º Fahrenheit. Anything above 160º will be well done. Awell done pork tenderloin will be less juicy than the other options.Remember that with a pork tenderloin, the thinner areas will be more well-donethan then thicker ones. This allows you to cater to different preferencesusing the same cut of meat.Remember that the temperature will elevate a few degrees while the porktenderloin is resting. Therefore, I like to remove it from the grill when it’sa few degrees lower than I want it, then double check after it rests for 5minutes.”
