This Leftover Chicken Shepherds Pie is the perfect encoreand a great way to use up leftover chicken and mashed potatoes. I call it“Leftover Chicken Shepherds Pie” because I usually make it after we’ve had aroast chicken but honestly, this is so good it would be work roasting a coupleof chicken breasts or — dare I say it — picking up a rotisserie chicken at thesupermarket. So easy, so delicious. So damned comforting.I wasn’t quite sure how the kids would respond to this one — Jon has madetraditional shepherds pie before with ground beef and they’ve liked that. Butchicken pot pie has been a tough sell. As something of a hybrid of the two, Iwasn’t sure what they’d think. Lilly looked at it a bit dubiously butultimately the siren call of mashed potatoes won her over and they bothgobbled it up. If you’re working with a picky eater, I suggest relying heavilyon the mashed potatoes in your sales pitch.And really, its all about the potatoes. While they stay fluffy, almostdownright creamy, in the center, the top part takes on a golden, crispy edgethat makes this dish memorable. Of course, the filling is pretty awesome tooconsidering how easy it is to make. Sautee some onions and carrots and celeryin an oven-safe cast-iron skillet, add some flour and broth to thicken andfold in your leftover chicken and some peas (or corn! or both!). Slather withpotatoes and bake.Poor Jon has been too tied up with work to join us for dinner this week sothis is about the only real meal I’m planning on making. Lucky for him, Isuspect this dinner will be one of our regulars in the next few months —especially once the snow starts falling. This is perfect fuel for snowshoveling!
How to Make Chicken Shepherd’s Pie
The first thing you need to do is to cook the potatoes. Hard, lumpy potatoeswon’t work for this recipe.Boil a large pot of salted water on the stove. Add potatoes and cover. Cookfor 15 minutes or until potatoes is tender. I check mine with a fork.Drain the water from the potatoes. Add in milk, salt, pepper, and butter. Mashuntil nice and smooth.In a large pan, melt butter over medium heat. Add in the onions and garlic andcook for about 5 minutes. Stir in the flour.Whisk in milk, Dijon mustard, lemon juice, rosemary, and curry powder.Continue whisking until the mixture thickens. Add in the chicken and frozenvegetables and stir for another 3 to 5 minutes.Now to assemble! I used a 1.5-quart casserole dish. Spread the chicken mixtureon the bottom and then add the mashed potatoes to the top. Sprinkle onParmesan cheese.Broil for 5 minutes or until the cheese melts. Serve hot.
