Toss the zucchini noodles lightly with tongs and cook for for 3-5 minutes or until al dente. Don’t let the noodles cook for longer or they’ll wilt. Embrace the crunch! If you’re cooking more than 1 spiralized zucchini, it may take up to 5-7 minutes to cook the zucchini thoroughly. Just keep tossing so that all zucchini noodles hit the bottom of the hot skillet and cook through.

My favorite veggie to turn into noodles is zucchini! They’re the perfecttexture, plus they have a mild flavor that takes on whatever sauce you’reusing… similar to regular pasta. Zucchini noodles are also super easy to make.There are a few different methods depending on what kitchen tools you on hand: 1. Spiralizer: The easiest way, in my opinion, is to use a spiralizer to make your zucchini noodles. You can make them whatever size you like, but I prefer to use the thinner noodle blade. 2. Vegetable peeler: If you don’t have a spiralizer, you can use a vegetable peeler to peel the zucchini into thin ribbons by sliding the peeler down the zucchini lengthwise. 3. Mandoline slicer: Another option is to use a mandoline with the julienne blade. I feel like I’m always seeing people cut themselves when they use this slicer so be super careful!If you don’t have any of these tools or just want to take a shortcut, you canbuy prepared zucchini noodles from the store. Look for them in the producesection with other pre-chopped veggies/fruits.

I’m pretty sure I madethis dish because it’s just so fun to say 😛But seriously zucchini noodles are the perfect way to have your spaghettiwithout having to worry about the carbs or finding a good gluten free pasta.The avocado pesto sauce gives this dish that perfect creamy texture. You won’tbe missing dairy with this sauce.If you’re looking to make this dish a little quicker, you don’t need toinclude the peppers and mushrooms. I just added them for a splash of colourand some interesting flavour. But go ahead and add the pesto to some freshlymade Zoodles and you’ll have a delicious side dish in no time.

Recipe Notes:

1. Taco Shells – whatever taco shells or tortillas you use, warm them! Tacoshells should be baked until crispy (they are kind of chewy and bendy straightout of the packet) and tortillas only need 20 seconds or so in the microwave(or wrap in foil and bake 5 to 10 minutes)2. Meat – I usually use lean. If you use fatty beef, you can drain excessfat before adding Seasoning. Can also use chicken, turkey, pork.3. Cheese – Monterey Jack is my favourite, then cheddar, tasty, pepper jack.Australia – Monterey Jack is now sold at Aldi, sometimes at Costco! Use to besold at Harris. Melts like mozzarella, tasty like cheddar, non greasy. It’s myfave.4.
