Since there are many people who are wheat intolerant, I wanted to try makingsome pastry from spelt flour. Whilst this is not suitable for people on agluten free diet, it is often good for people with a wheat intolerance.The pastry was made in exactly the same way as shortcrust pastry made fromwheat flour and the result was really good. There are some reasons other thanwheat intolerance too why people might choose spelt flour over wheat flour.Spelt flour is a little more expensive than wheat flour and is often organic.It is now widely available in large supermarkets and also in local food storesand health shops.

How to make a simple cheese and onion quiche recipe:

Roll out your pastry and line a fluted tin.Place this in the freezer for 15 minutes until firm.Placed chopped onions and butter in a saucepan. Stir regularly for around 10minutes, until cooked through but not too brown.Bake the pastry case lined with foil and baking beans at 200C (gas mark 6) for15 minutes.Remove the baking beans and bake for a further 5 minutes until your pastry islight brown.Whisk together the eggs and double cream.Add seasonings, onion and the grated cheddar.Pour this mixture into the pastry case.Top with black pepper, cheddar cheese and finely chopped green or red chillidepending on if you like spice or not.Bake for 30-35 minutes at 200c (gas mark 6). Check a few minutes before toensure it’s not catching or becoming too dark.This cheese and onion quiche is always a great hit when I make it. You don’tneed to make your own pastry if you don’t have the time or inclination. Themixture is what makes this quiche taste so delicious. Nobody will know if youmade your own pastry or not!

Goat’s Cheese Quiche Recipe

The quiche is made with soft goats cheese – the sort you buy in in a cylindershape. It is easy to cut into slices to arrange in the quiche.Goat’s cheese is incredibly delicious. The baking in the oven really bringsout its flavour, too. It is great served with greens such as spinach orwatercress. The quiche can be eaten hot or cold but it is probably at its bestcold, served with a salad or with vegetables and rice.Much goats cheese you find is french but you can also get Welsh goat’s cheese.Do buy it from your local cheese shop or deli if you can.Goats cheese costs around £1.50-£2.00 for 100g so the whole quiche will costaround £4″
