A “salad” can be somuch more than some lettuce with dressing on it. There are tons of reallycool, healthy flavor combinations out there. To get inspiration, it’s fun tolook at some other cultures and cuisines. This is where I found the idea foran Asian Cucumber Salad!

Type of Cucumber to use

This Cucumber Salad works equally well with long cucumbers (Telegraph /English cucumbers) or the more common standard cucumbers (called Lebanesecucumbers in Australia).The difference between the two is that the long cucumbers are not as watery /juicy inside so they have a slightly more intense cucumber flavour. It’suseful when you don’t want the natural juiciness of cucumbers to water downthe flavour in a salad when you munch your way through it.For this particular Cucumber Salad, either will work. Use 2 long ones, or 3 to4 standard cucumbers.

It’s a super simple side salad, as many of my Side Salads are (and should be,in my opinion!). The thing that makes this Cucumber Salad so tasty is aterrific Herb & Garlic Dressing which adds tang and flavour to the juicy,crisp cucumber.

Asian Cucumber Salad Dressing Recipe Ingredients

The Asian cucumber salad dressing recipe comes together with just 4ingredients, starting with rice vinegar, the secret to its bright, tangyflavor. I grabbed a bottle of rice vinegar in the Asian aisle at the grocerystore, along with a bottle of dark sesame oil.A little dark sesame oil (made from toasted sesame seeds) goes a long way,packing tons of nutty flavor. But don’t be afraid to go for the larger bottlesof each — I predict this yummy Asian side dish is going to be on repeat thissummer!To the rice vinegar and toasted sesame oil, we’ll just add a little sugar andsalt for balance, producing a light and bright Asian vinaigrette. Whisk it alltogether and drizzle it over your cool, crisp, thinly sliced cucumbers.TIP: Marinated salads like this always improve over time. Refrigerate it forat least 30 minutes after preparing to allow the flavors to develop, and itwill keep for at least five days in the refrigerator. Or so I’ve heard —leftovers are usually gone by the next morning in our house!
