My daughteractually requested this for dinner the other night, but since it’s almostfall, I thought I would put a seasonal spin on our usual chicken salad recipe.I started out with some baked chicken tenders that I had saved from theprevious night’s dinner. It’s somewhere in between the two, andit’s got a bit of a tang, which is perfect. My little guy loves mustard, so Iadd it to many of the creamy salads we have.I know it’s almost fall, but the weather is still warm here, so this salad isperfect for a light dinner. And to go with it, I poured myself a big old glassof Tradewinds Slow Brewed Iced Tea. I’ve been sipping on this tea all summerlong, and there’s no reason to stop now.
