And only 7 ingredients in the entire recipe. 1. Graham Cracker Crust: We use my favorite graham cracker crust for the base of today’s pies. I use this crust recipe for pies, cakes, cheesecakes, and more. The buttery and slightly crisp texture is the exact contrast I want with these little key lime pies. You only need 3 ingredients– butter, graham crackers, and sugar– so you know it’s good. To ensure a compact crust, make sure you press the mixture tightly into each individual muffin cup. You’ll use a little over 1 Tablespoon of crust in each individual pie. 2. Key Lime Pie Filling: Our key lime pie filling is tart, sweet, and creamy– exactly as key lime pie should be. Cream cheese acts as the base of the filling, providing a little structure and a subtle cheesecake flavor. (By the way, if you like key lime pie and cheesecake, you have to try my key lime cheesecake.) Also adding a little structure, as well as a rich texture, are egg yolks. To those, we’ll add sweetened condensed milk and key lime juice. For best flavor make sure you use key lime juice, though regular lime juice works in a pinch.
How To Make The Graham Cracker Crust
If you have a spare 5 minutes you can make graham cracker crust at home.To make homemade graham cracker pie crust only takes a couple of minutes andingredients.Melt 6 Tablespoons of unsalted butter and let cool slightly. Buy a box ofgraham cracker crumbs or make your own. If you make your own crumbs it willtake an additional 5-10 minutes.Press the graham cracker mix into the bottom of the muffin cups and bake.To make your own graham cracker crumbs either drop the graham crackers in afood processor and pulse a few times. Or place the crackers in a gallon sizefreezer bag and lightly pound with a rolling pin. Then to finish off into finepieces roll the bag with the rolling pin.In a bowl mix the finely crushed graham crackers with the melted butter,granulated sugar and kosher salt. Mix well.Place paper or foil muffin cups in muffin tins. You can make 24 mini key limepie bites or 12 regular muffin size bites.Press about a teaspoon graham cracker mix into the bottom of the mini-muffincups or a Tablespoon into the large muffin cups. Press to firm or use the backof a ¼ teaspoon measuring spoon to press.Bake in a preheated 350-degree oven for 5 minutes for the mini or 8 minutesfor the large muffins. Remove and cool.Make mini key lime pie bites or make in regular size muffin tin for a heartiertreat
